My mortgage on the house I have been letting out is interest only. Can I put the full amount I pay each month in interest onto my tax return in the 'loan interest' section 24?

Yes, you can put the full amount you pay each month in interest (i.e. the annual amount) in the Property Income part of your tax return in the ‘loan interest’ section in box 24.
